My humble hubby was really shy about sharing his self-invented recipe for the Baked Cheese Potato yesterday. Whenever he likes to eat something very much, he would try to think of the possible ingredients that would go into that dish and then he will start experimenting it in the kitchen; so that he can save money from eating at the restaurants. So far, no wastage. *wink* I think he inherited this from his mom. Of 'cos, his mom culinary talent is 100 times more superior. *giggle*
To him, his Baked Cheese Potato is a 'Just-Good-Enough' dish for our taste buds, that's why I didn't put the recipe down in my previous post. He thinks that its not up to the standard of what restaurants serve.
After yesterday's post, Blessed Mum asked for the recipe and a couple of emails asking the same question too, I sought permission from my man and finally he nodded shyly.
Boil the Potato for about 35-45min until its soft. (potato must be fully submerged in the water)
Use a fork to poke into the potato to test.
If the fork slides out of the potato effortlessly, then its ready.
Peel off the skin. (Careful, its really hot. I know, 'cos I helped in this part too)
Crush the potato with a fork.
Use a little olive oil to spread on the base and the sides of oven-able bowl.
Spread the crushed potato around the bowl.
Sprinkle some salt.
Put a few slices of butter on the potato.
Spread the Shredded Mozzarella Cheese all over the top.
(We do not have an oven, so we use our SnackMaker.)
We put the oven-able bowl into our SnackMaker for 5-6mins, high heat.
Take it out to see if you are satisfied with the 'look' of your Baked Cheese Potato.
Some like it more 'Brown Looking'.
If you fall into this group, then put the bowl in for another 4 more minutes.
Ta-Daa.... and its done!

Yesterday we forgot to buy bacon, which we usually do.
Heat the bacon on the wok/pan till crispy (all fats on the bacon gone).
Then use a kitchen scissors to cut the strip of bacon into bits.
Sprinkle on top of the Baked Cheese Potato for the ultimate biting sensation.
